  • 1.25 lb boneless skinless chicken breasts or chicken thighs, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon Salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.125 teaspoon paprika
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 1.5 tablespoons minced fresh garlic (4 cloves)

Preparation

  • Prep the chicken pieces, ensuring they are cut into bite-sized chunks for even cooking. Season with Italian seasoning, salt, black pepper, and paprika, tossing to coat well.

Cooking

  • Heat a skillet over medium-high heat and add olive oil. Add the seasoned chicken pieces in a single layer, cooking undisturbed until golden brown on one side.
  • Stir the chicken to brown all sides. Once fully cooked and golden, remove from the skillet and set aside to keep warm.
  • In the same skillet, reduce heat to medium and add 2 tablespoons of butter, allowing it to foam while scraping up flavorful bits from the pan.
  • Add minced garlic, stirring constantly until fragrant and slightly softened.
  • Return the cooked chicken to the skillet, tossing to coat in the garlic butter mixture. Add the remaining tablespoon of butter, allowing it to melt into the dish.
  • Stir in finely chopped parsley before serving.

Notes

Let the chicken rest for a few minutes before serving for juiciness. Optionally add a pinch of red pepper flakes for heat. Fresh parsley can be substituted with other herbs if preferred.
