Main Ingredients

  • 2 cups chicken broth
  • 2 cups cooked chicken, shredded or chunked
  • 1 can (16 oz) refried beans creamy texture
  • 1 can (15 oz) chili beans do not drain, adds moisture
  • 1 can (14.5 oz) petite diced tomatoes do not drain, adds flavor

Spices

  • 1 teaspoon cumin warmth
  • 1 teaspoon garlic powder depth
  • 1 teaspoon onion powder savory note
  • 1 teaspoon chili powder mild heat

Instructions
 

Preparation

  • Place a pot over medium-high heat. Add all of the ingredients directly into the pot.
  • Stir gently to combine all elements well and monitor until it reaches a rolling boil.
  • Once boiling, reduce heat to low or medium-low and let it simmer, stirring occasionally.
  • After 15-20 minutes, the soup should have thickened. Taste and adjust seasoning if needed.

Notes

Garnish with sour cream, tortilla strips, shredded cheese, jalapeƱo slices, or avocado for added flavor and texture. Use leftover chicken for convenience.
