  • 1 packet taco seasoning Or 1 ½ tablespoon, enhances flavor
  • 1 tablespoon olive oil Adds richness
  • 1 ½ cups cheddar cheese White and yellow, for melt and flavor

  • Fresh cilantro For garnish, adds freshness

Instructions
 

Preparation

  • Preheat your oven to a comfortable baking temperature.
  • In a mixing bowl, combine the refried beans, black beans, corn, and salsa, stirring until well blended.
  • Drizzle the olive oil over the chicken breasts, coating them well. Season the chicken with salt and pepper.
  • Place the seasoned chicken in a 9×13 inch baking dish and spread the bean and salsa mixture evenly over the chicken.

Cooking

  • Cover the baking dish tightly with aluminum foil and bake.
  • Once baking is complete, remove the foil and sprinkle cheddar cheese over the chicken and bean mixture.
  • Return the dish to the oven, uncovered, until the cheese is bubbly and slightly golden.
  • Remove from the oven and let it cool slightly before serving.
