Ingredients
  

For the Beef Mixture

  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 1 pound lean ground beef Use lean ground beef for a hearty meal without excess grease.
  • 3-4 cloves garlic, minced

For the Casserole

  • 3 cups marinara sauce (one 24 oz. jar)
  • 2 packages uncooked refrigerated cheese tortellini (9 ounces each)
  • Salt & pepper to taste Adjust seasoning to enhance flavors.
  • 1 cup shredded mozzarella Adds creaminess.
  • 1 cup shredded cheddar For extra flavor.

Preparation

  • Preheat your oven to 375°F and adjust the rack to the upper third of the oven.
  • In a skillet over medium-high heat, add the olive oil and chopped onion. Sauté for about 4-5 minutes until the onion is translucent.
  • Add the lean ground beef and minced garlic to the skillet. Cook, stirring occasionally, for 8-10 minutes until the beef is browned.
  • Transfer the beef mixture into a 9x13 casserole dish. Pour in the marinara sauce and add the uncooked tortellini. Season with salt and pepper, then gently toss to combine.
  • Spread the mixture into an even layer in the casserole dish. Sprinkle the shredded mozzarella and cheddar on top. Cover tightly with foil.

Baking

  • Bake in the preheated oven for about 35-40 minutes, until the tortellini is cooked through and the cheese has melted.
  • For a golden topping, uncover and broil for a few minutes, watching closely to avoid burning.

Notes

Allow the dish to sit for a few minutes after baking to help the sauce settle. Serve with a side salad or garlic bread.
