Ingredients
  

For the Chicken

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup wooden skewers, soaked in water for 30 minutes Soaking prevents burning on the grill.

For the Bang Bang Sauce

  • 1 ¼ cups mayonnaise
  • cup Thai sweet chili sauce
  • 2 teaspoons Sriracha, or more to taste Adjust according to heat preference.
  • 2 tablespoons honey

Preparation

  • Soak the wooden skewers in water for about 30 minutes to prevent burning.
  • In a mixing bowl, combine cubed chicken with olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss until well-coated.
  • Thread the coated chicken onto the soaked skewers, ensuring even distribution.
  • In a separate bowl, mix mayonnaise, Thai sweet chili sauce, Sriracha, and honey to prepare the bang bang sauce. Adjust Sriracha as desired.

Grilling

  • Preheat the grill to medium heat and grill the chicken skewers, turning occasionally until the chicken is cooked through and no longer pink.
  • Once done, remove skewers from heat and serve warm with the bang bang sauce.

Notes

Serve with a fresh salad or steamed rice. Leftovers can be reheated or used in wraps.
