Ingredients
  

For the rice

  • 1.5 cups Long-grain white rice Fluffy base
  • 2.25 cups Water For cooking rice

For the chicken

  • 1 lb Chicken breast, boneless and skinless Protein source
  • 0.5 cup BBQ Sauce Flavorful glaze

For the veggies

  • 1 cup Sweet corn Sweetness and color
  • 15 oz Black beans, drained and rinsed Nutritional boost
  • 1 whole Avocado, thinly fanned Creamy texture
  • 0.5 large Red onion, thinly sliced Sharpness
  • 0.25 cup Fresh Cilantro, chopped Freshness
  • 0.25 cup Ranch or Lime Crema Added creaminess

For cooking

  • 2 tbsp Vegetable Oil For cooking

Preparation

  • Rinse the rice in a mesh sieve until the water runs clear to remove excess starch. Combine the rice with water and a pinch of salt in a pot. Bring to a boil, then cover, reduce heat to low, and let simmer for 15 minutes. Remove from heat and let rest for 5 minutes.
  • While the rice is cooking, heat oil in a skillet over medium-high heat. Pat the chicken breasts dry and place them in the skillet, searing for 5-6 minutes on each side until golden. Brush with BBQ sauce in the last 3 minutes of cooking.

Cooking

  • Remove the cooked chicken from the skillet and let it rest. In the same skillet, add sweet corn and stir frequently until caramelized. Then, add black beans and heat through for 1-2 minutes.

Assembly

  • Layer a serving of rice in each bowl. Top with sliced chicken, caramelized corn, and warm black beans. Add fanned avocado, sprinkle with red onion, and finish with cilantro. Drizzle with ranch or lime crema before serving.

Notes

For best results, rinse rice properly to avoid stickiness and let the chicken rest after cooking to retain juices. Customize toppings based on preferences.
