For the Skewers

  • 2 lb boneless skinless chicken breasts Cut into 1-inch cubes.

Preparation

  • Cut the chicken breasts into uniform cubes, about one inch in size.
  • In a large bowl, combine the coconut milk, chicken broth, lime zest, lime juice, garlic, and brown sugar to make the marinade.
  • Add the cubed chicken to the marinade, making sure each piece is fully coated. Cover the bowl and let it marinate.

Grilling

  • Prepare the grill or grill pan and heat it up.
  • Remove the chicken from the marinade and lightly toss in flour to create a crust.
  • Thread the chicken onto skewers, alternating with green onion and cilantro.
  • Grill over medium-high heat, turning occasionally until cooked through and golden.
  • Let the skewers rest for a few minutes before serving.

Notes

For best flavor, consider marinating overnight. Use metal skewers for convenient grilling and soak wooden skewers beforehand to prevent burning.
