  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1.5 cups whole milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Seasonings and Other Ingredients

  • 2 tablespoons unsalted butter
  • to taste garlic powder
  • to taste onion powder
  • to taste smoked paprika
  • to taste salt
  • to taste pepper
  • to drizzle olive oil
  • to taste thyme
  • for garnish parsley

Instructions
 

Preparation

  • Heat a large skillet over medium heat and add a drizzle of olive oil.
  • Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Once the oil is hot, add the seasoned chicken to the skillet and sear until golden brown.

Cooking

  • Remove the chicken from the skillet and set aside.
  • Add the butter to the skillet, let it melt, and scrape up flavorful bits.
  • Add the rice, stirring to toast slightly.
  • Pour in the chicken broth, bring to a simmer, and return the chicken to the skillet. Cover and cook until the rice is tender.
  • Slowly add the whole milk, then mix in the cheeses until melted and creamy.
  • Adjust seasoning with salt and pepper, then add thyme for aroma. Garnish with parsley.

Notes

Let the dish rest for a few minutes before serving to thicken. Pair with a green salad or roasted vegetables.
