  • ¼ cup finely chopped green bell pepper

  • ¼ teaspoon ground black pepper
  • 2 cloves garlic, minced
  • ¾ cup tomato sauce
  • ¼ cup unsweetened Primal Kitchen ketchup
  • ¼ cup water
  • 1 tablespoon pure maple syrup
  • 1 tablespoon apple cider vinegar
  • ¾ teaspoon chili powder
  • 1–2 teaspoons hot sauce (optional)
  • 4 pieces gluten free buns or baked sweet potatoes for serving

Instructions
 

Preparation

  • Begin by heating the olive oil in a medium skillet over medium heat.
  • Once the oil is shimmering, add the ground beef to the pan and break it up with a mixing spoon.
  • Cook until the beef is evenly browned, losing its pink color.
  • Add the minced yellow onion and finely chopped green bell pepper to the skillet.
  • Stir well and cook until the vegetables soften.
  • Season with salt and black pepper and add the minced garlic, cooking until fragrant.

Cooking

  • Pour in the tomato sauce, unsweetened Primal Kitchen ketchup, and water; mix together.
  • Stir in maple syrup, apple cider vinegar, chili powder, and hot sauce.
  • Let the sauce simmer on medium heat to meld flavors.
  • Taste and adjust seasoning with additional salt if needed.
  • Serve the bourbon peach BBQ chicken on gluten-free buns or baked sweet potatoes.

Notes

For a smokier flavor, use smoked paprika in place of chili powder. Leftovers are versatile and can be stored for three days.
