Ingredients
  

Casserole Base

  • 1 2 cup plain Greek yogurt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 10.5 ounces cream of chicken soup
  • 3 cups shredded rotisserie chicken Can use leftover cooked chicken.
  • 1 cup chopped broccoli florets
  • 1/2 cup diced onion
  • to taste Kosher salt
  • 2.5 cups cooked rice Ensure rice is fully cooked.

Toppings

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup crushed whole wheat crackers
  • 2 tablespoons melted butter For mixing with cracker topping.

Instructions
 

Preparation

  • In a mixing bowl, combine Greek yogurt, garlic powder, and black pepper. Mix well.
  • Add cream of chicken soup to the bowl and blend it with the yogurt mixture until smooth.
  • Gently fold in shredded rotisserie chicken, chopped broccoli, and diced onion into the mixture.
  • Season the mixture with kosher salt to taste, then incorporate the cooked rice.

Baking

  • Preheat your oven before transferring the mixture to a casserole dish. Evenly spread the chicken and rice mixture into the dish.
  • Sprinkle shredded cheddar cheese over the top followed by the crushed crackers mixed with melted butter.
  • Bake in the preheated oven until bubbling and golden brown on top.

Notes

Taste the mixture before baking to adjust the seasoning. Let the casserole cool slightly before cutting for easier serving.
