Preparation

  • Combine the chicken strips, Cajun seasoning, and salt in a mixing bowl, ensuring even coating.
  • Heat olive oil and butter in a large pan over medium heat until melted.
  • Add the seasoned chicken to the pan and cook until golden brown.
  • Add the onion, garlic, sun-dried tomatoes, and tomato paste to the pan. Stir and cook for about five minutes.

Cooking

  • Stir in the orzo pasta and allow it to absorb the flavors for about a minute.
  • Pour in the chicken broth and bring to a gentle simmer. Cover and cook for 20 minutes, stirring frequently.
  • Once the orzo is nearly tender, gently fold in the spinach to wilt it down.
  • Stir in the heavy cream and grated Parmesan cheese until well combined.
  • Plate the Cajun Chicken Orzo and sprinkle additional Parmesan cheese on top before serving.

Notes

Ensure even cooking by cutting chicken into uniform strips and adjust Cajun seasoning to your spice preference. Searing chicken in batches may enhance flavor.
