Preparation

  • Prepare the chicken thighs by deboning them while keeping the skin intact. Set them aside.
  • In a small bowl, combine minced garlic, honey, soy sauce, lime juice, cayenne pepper, and salt. Whisk until the honey dissolves.

Marination

  • Place chicken thighs in a baking dish or skillet, skin side up. Pour the marinade over the chicken, ensuring each piece is well-coated.

Cooking

  • If using a skillet, heat over medium heat and sear chicken skin side down until golden brown. If using a baking dish, place it in a preheated oven.
  • Cook until the skin is crispy and the meat reaches a safe internal temperature. The sauce will reduce and thicken.

Finishing Touches

  • Once cooked, take the chicken out and let it rest for a few minutes before serving.
  • Garnish with chopped parsley and lime wedges before serving.

Notes

Letting the chicken marinate for extra hours enhances the flavor. Serve with a light salad or crusty bread. Adjust cayenne pepper for desired spice level.
