  • 8 oz Ground Chicken
  • 1/2 cup chopped Red Bell Pepper
  • 1/3 cup chopped White Onion
  • 1 tbsp finely chopped Jalapeño Pepper Optional
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 1/2 tsp Kosher Salt or 1/4 tsp. Sea Salt, plus more to taste
  • 1/2 tsp Ground Cumin
  • 1 cup Cooked Rice
  • 1/4 cup Salsa Verde or your favorite salsa
  • 1 tbsp Chipotle Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 4 pieces Extra Large Flour Tortillas (burrito-sized)

Instructions
 

Preparation

  • Begin by heating 1 tablespoon of avocado or olive oil in a large nonstick skillet over medium heat.
  • Once the oil is shimmering, add the ground chicken, chopped red bell pepper, white onion, and the optional jalapeño pepper.
  • Cook everything together for about 7-8 minutes until the chicken is no longer pink and the vegetables have softened.
  • Stir in the garlic powder, chili powder, kosher salt, and ground cumin, and continue cooking for another 1-2 minutes.
  • Add the cooked rice, salsa verde, and chipotle sauce into the skillet and mix thoroughly.
  • Taste the filling and adjust the salt as needed.

Assembly

  • Prepare your tortillas by laying one flat on a clean surface.
  • Sprinkle a layer of shredded cheese down the center, followed by about half a cup of the chicken rice filling, and then add a bit more cheese on top.
  • Carefully roll the tortilla, tucking in the sides to form a burrito.

Cooking and Serving

  • Place the burritos seam-side down in a nonstick pan over medium heat.
  • Toast them until golden brown, rotating as necessary to evenly crisp all sides.
  • Serve with sides like sour cream, salsa, guacamole, refried beans, or chips.

Notes

These burritos can be made ahead of time and reheated easily. Ensure the filling isn’t too watery to avoid soggy tortillas.
