  • 1 lb ground chicken
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional) Adjust based on desired heat
  • 2 tbsp tomato paste
  • 1 14.5 oz can diced tomatoes
  • 2 cups chicken broth
  • cups milk
  • 8 oz pasta (penne, rotini, or shells)
  • cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat. Once shimmering, add the chopped onion and sauté until softened and translucent.
  • Stir in garlic, salt, black pepper, Italian seasoning, and red pepper flakes. Cook for about a minute until garlic is fragrant.
  • Add ground chicken to the skillet, breaking it up with a spatula. Brown evenly, stirring occasionally.
  • Once chicken is browned, stir in tomato paste and cook for another minute.

Cooking

  • Add diced tomatoes, chicken broth, and milk to the pan. Stir to combine.
  • Bring the mixture to a gentle simmer, then add pasta and stir to ensure it’s evenly coated.
  • Once pasta is cooked to your liking, stir in cheddar and mozzarella cheese until melted.
  • Sprinkle Parmesan cheese on top and stir gently to combine, then garnish with parsley before serving.

Notes

Serve with a side salad or garlic bread. Leftovers can be reheated with a splash of milk. Adjust the thickness of the sauce by modifying broth or milk.
