Chicken Alfredo Lasagna Roll-Ups

- 12 noodles lasagna noodles Cooked according to package instructions
- 15 oz Alfredo sauce Use your favorite brand
- 4 cups shredded cooked chicken Use leftover rotisserie chicken for convenience
- 2 cups shredded mozzarella, divided Reserve 1 cup for topping
- 1/2 cup grated Parmesan, divided Reserve 1/4 cup for topping
- 1 tsp garlic powder
- 1/2 tsp lemon zest
- 1/2 tsp Italian seasoning
- to taste Fresh parsley, optional For garnish
Instructions
Preparation
- Preheat your oven to 350°F.
- Spread a thin layer of Alfredo sauce at the bottom of a baking dish.
- Cook the lasagna noodles according to the package instructions until they are al dente. Drain and lay them flat on a clean surface.
- In a mixing bowl, combine the shredded chicken with a portion of the Alfredo sauce, 1 cup of mozzarella, 1/4 cup of grated Parmesan, garlic powder, lemon zest, and Italian seasoning. Mix well to create a creamy filling.
Assembly
- Spread a generous amount of the chicken filling over each noodle. Carefully roll each noodle up from one end to the other.
- Place the filled roll-ups seam-side down in the baking dish.
- Pour the remaining Alfredo sauce evenly over the top and sprinkle with remaining mozzarella and Parmesan cheese.
Baking
- Cover the baking dish with aluminum foil and bake for about 20 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden. Optionally, broil for a couple of minutes to achieve a crispy top.
Notes
For best results, ensure the noodles are cooked al dente. Allow the roll-ups to rest after baking for easier serving.
