Ingredients
  

Pasta and Base

  • 10.5 oz 10.5 oz (300 g) pasta Your choice of pasta
  • 1 tablespoon 1 tablespoon olive oil
  • 1 tablespoon 1 tablespoon (20 g) unsalted butter
  • 1 lb 1 lb (450 g) chicken breast, cut into 1-inch pieces Use boneless, skinless chicken
  • 1 medium 1 medium shallot, finely diced
  • 4 cloves 4 garlic cloves, minced

Sauce Ingredients

  • ½ tablespoon ½ tablespoon Italian seasoning
  • cup ⅓ cup (75 ml) dry white wine For deglazing
  • 1 cup 1 cup (200 ml) heavy cream (double cream)
  • ½ cup ½ cup (50 g) Parmesan, grated Freshly grated preferred
  • 1 handful A handful fresh parsley, chopped For garnish
  • to taste Salt and freshly ground black pepper to taste

Instructions
 

Preparation

  • Begin by cooking your pasta according to the package’s instructions. This usually means boiling water in a large pot, adding a pinch of salt, and then the pasta until it reaches a tender texture.
  • Once done, drain it but save a little of the starchy water.

Cooking Chicken

  • In a skillet, heat the olive oil and butter over medium heat. Add the chicken pieces and sauté until golden and cooked through, typically taking just a few minutes.

Building the Sauce

  • Add the shallot and minced garlic to the skillet, sautéing until soft and fragrant.
  • Sprinkle in the Italian seasoning, then pour in the dry white wine, scraping any bits stuck to the bottom of the pan.
  • Pour in the heavy cream and stir until fully combined.
  • Add the grated Parmesan and mix until melted into the sauce.

Combining

  • Combine the pasta with the sauce, gently tossing everything together. If the sauce feels too thick, add a splash of the reserved pasta water.
  • Season with salt and freshly ground black pepper to taste.

Serving

  • Before serving, sprinkle the chopped fresh parsley on top for garnish.

Notes

For added flavor, consider incorporating crispy bacon pieces right before serving or a squeeze of lemon juice for zest.
