  • 2-3 pieces boneless chicken breasts, large, skinless, halved horizontally
  • 4 tablespoons all-purpose flour
  • 4 tablespoons parmesan cheese, finely grated, fresh
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper, cracked
  • 5 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 1 whole head garlic, peeled and divided into 10-12 cloves
  • 1 1/4 cup chicken broth
  • 1 1/4 cup heavy cream
  • 1/2 cup parmesan cheese, finely grated, fresh
  • 2 tablespoons fresh parsley, to serve

Instructions
 

Preparation

  • Start by seasoning the halved chicken breasts with salt, garlic powder, and cracked black pepper.
  • In a shallow bowl, mix together the flour and freshly grated parmesan cheese.
  • Coat each piece of chicken in the flour mixture, making sure to shake off any excess.

Cooking

  • Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  • Once the oil is shimmering, add the chicken breasts to the skillet and fry each side for a few minutes until they develop a golden color and are cooked through.
  • Transfer the chicken to a warm plate and cover loosely.
  • In the same skillet, add the remaining olive oil and butter if needed to fry the remaining chicken breasts.
  • Remove the chicken and wipe the pan clean with a paper towel.
  • Add the finely chopped onion to the skillet and sauté until soft and slightly translucent.
  • Smash around 6 of the garlic cloves and add them to the pan; sauté until fragrant.
  • Pour in the chicken broth, scraping the bottom of the pan to deglaze it, and let it simmer for about five minutes.
  • Reduce the heat to medium-low and pour in the cream; gently simmer for a couple of minutes until it thickens.
  • Stir in the freshly grated parmesan cheese and return the chicken to the pan, simmering for a few more minutes.

Serving

  • Garnish with fresh parsley and serve over pasta, rice, or your side of choice.

Notes

Ensure the chicken is dried before seasoning for a crispier exterior. Let the chicken rest to keep it juicy, and adjust the sauce's consistency with chicken broth or cream if needed.
