Instructions
 

Preparation

  • Heat the oil in a large pot over medium-high heat.
  • Add the diced red pepper, onion, and jalapeno, sautéing for 3-4 minutes until softened.
  • Incorporate the tomato paste, minced garlic, cumin, and chili powder into the pot, toasting for about 1 minute.
  • Stir in the diced tomatoes and chicken broth.
  • Add the chicken breasts to the pot, ensuring they are submerged.

Cooking

  • Cover the pot, reduce heat to medium, and cook for about 15 minutes until the chicken is fully cooked.
  • Remove the chicken, shred it, and return it to the soup.
  • Add the corn and black beans to the pot, heating them through.

Serving
