Preparation of Chimichurri Sauce

  • In a mixing bowl, combine the fresh cilantro and chopped parsley.
  • Add the fresh oregano to the bowl.
  • Finely chop the shallot and add it to the mixing bowl.
  • Peel and mince the garlic cloves; add them to the mixture.
  • Finely chop the seeded jalapeno pepper and add it to the bowl.
  • Squeeze the fresh lemon juice into the mixing bowl.
  • Pour in the red wine vinegar and combine the ingredients gently with a whisk or fork.
  • Gradually drizzle in the olive oil while whisking to emulsify the sauce.
  • Season the chimichurri sauce with kosher salt and fresh ground pepper.

Cooking the Chicken

  • Preheat your oven according to the recipe instructions.
  • Arrange the boneless skinless chicken thighs in a baking dish or oven-safe skillet.
  • Generously spoon the chimichurri sauce over the chicken thighs.
