Preparation

  • In a large bowl, combine the cooked chicken, mayonnaise, diced celery, diced red onion or shallots, sliced green onions or chives, Dijon mustard, lemon juice, kosher salt, and black pepper. Use a large mixing spoon to ensure all ingredients are well incorporated.
  • Stir the mixture until it reaches the desired consistency. If you prefer a creamier salad, you can add a little more mayonnaise.
  • Taste the chicken salad and season with additional salt and pepper as desired.
  • Serve the chicken salad immediately on a bed of lettuce, in a sandwich, or with crackers. If not serving right away, cover the bowl well with plastic wrap or transfer it to an airtight container.
