  • 1.5 pounds boneless skinless chicken breasts
  • 2 tablespoons avocado oil
  • 1/2 cup minced onion
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 1 red chili, thinly sliced (optional)
  • 2 teaspoons lime zest
  • 1 can full-fat coconut milk (13.66 oz)
  • 1 tablespoon fish sauce
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro and/or Thai basil (optional)
  • Additional lime wedges for serving
  • Sliced chili for garnish (if desired)

Instructions
 

Preparation

  • Heat the avocado oil in a large skillet over medium heat.
  • Add the minced onion and cook until translucent and fragrant.
  • Stir in the minced garlic and ginger, sauté for about a minute without browning.
  • Add the boneless skinless chicken breasts, cooking until browned on the outside.
  • Sprinkle in the lime zest and sliced chili, if using; stir to coat the chicken.
  • Pour in the coconut milk, fish sauce, and lime juice, stirring gently.
  • Allow the mixture to simmer, cooking the chicken through and thickening the sauce.
  • Once cooked, adjust seasonings and stir in the chopped herbs.

Notes

Serve with jasmine rice or over steamed vegetables. Enjoy leftovers in a wrap or salad.
