For the marinade and chicken

  • 1 lb chicken breasts or tenders provides protein

For the salad

  • ¾ cup toasted sliced almonds provides crunch
  • 1 cup wonton strips adds crispy texture
  • 2 romaine hearts chopped for freshness
  • Toasted sesame seeds for garnish
  • Finely chopped cilantro adds herbal brightness

Instructions
 

Preparation

  • In a mixing bowl, start by whisking together the soy sauce, brown sugar, and seasoned rice vinegar until well combined.
  • Transfer the marinade into a ziplock bag or a shallow container, then add your chicken. Seal or cover it well and refrigerate for at least two hours.
  • For the dressing, grab a clean glass jar. Combine the olive oil, seasoned rice vinegar, honey, sesame oil, soy sauce, and grated ginger (if using). Seal the jar and shake until blended.

Cooking

  • Heat a pan over medium heat, add oil, and carefully place the marinated chicken in the hot pan. Cook for 4-5 minutes on each side until browned and cooked through.
  • Chop the cooked chicken into bite-sized pieces.

Assembly

  • In a large bowl, combine the chopped romaine, toasted sliced almonds, wonton strips, sesame seeds, chopped cilantro, and chicken pieces. Toss gently.
  • Drizzle the dressing over the salad mixture and toss again until well coated. Serve immediately.

Notes

For best flavor absorption, ensure the chicken is fully submerged in the marinade. Adjust salt in the dressing to taste and toast almonds just before using for enhanced flavor.
