Creamy Boursin Chicken Pasta

Ingredients
  

Chicken and Seasoning

  • 2 large large chicken breasts, cut into bite-sized pieces
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Pasta and Base

  • 2 tablespoons olive oil
  • 8 ounces penne or fettuccine pasta
  • 1 tablespoon unsalted butter

Sauce Ingredients

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon Cajun seasoning (or more to taste)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste

Garnish

  • Fresh parsley, chopped for garnish

Instructions
 

Preparation

  • Season the chicken pieces with Cajun seasoning, smoked paprika, garlic powder, and onion powder.
  • Heat olive oil in a large skillet over medium heat, then add the seasoned chicken. Cook until golden and cooked through, stirring occasionally. Remove the chicken and set aside.

Making the Sauce

  • In the same skillet, melt the butter and add the minced garlic. Sauté for a minute without burning the garlic.
  • Pour in the heavy cream and stir gently. Add grated Parmesan cheese and chicken broth to the mixture.
  • Bring to a simmer and mix in Cajun seasoning and crushed red pepper flakes if using. Adjust salt and black pepper to taste.

Cooking the Pasta

  • Cook pasta according to package instructions until al dente. Drain without rinsing.

Combining

  • Add the cooked chicken and drained pasta to the skillet with the cream sauce. Toss until everything is coated and heated through.

Serving

  • Serve warm, garnished with fresh chopped parsley.

Notes

When seasoning chicken, use plenty of spices. For texture, consider adding sautéed mushrooms or spinach. Reserve pasta water for adjusting sauce consistency if needed.
