  • 2 cans cream of chicken soup (10.5 oz each) adds creaminess to the dish

  • 0.33 cup celery, diced adds crunch

  • 0.5 tsp thyme adds fragrant note

  • 1 pack (16 oz) grand biscuits (8 count) provides a flaky topping

Instructions
 

Preparation

  • Place the three boneless, skinless chicken breasts into the base of your crock pot.
  • Pour in the two cans of cream of chicken soup over the chicken.
  • In a medium bowl, combine 1¼ cups of milk with the soup to enhance the creamy texture.
  • Add the diced yellow onion to the pot.
  • Toss in the diced yellow potatoes.
  • Melt 2 tablespoons of unsalted butter and pour it into the crock pot.
  • Add the bag of frozen mixed vegetables along with the diced celery.
  • Season the filling with salt, paprika, dried parsley, rosemary, thyme, and black pepper.
  • In a small bowl, mix 1 tablespoon of corn starch with a little bit of water to create a slurry and stir it into the ingredients in the pot.
  • Put the lid on the crock pot and set it to cook.
  • About 30 minutes before serving, place the eight grand biscuits on top of the mixture.
  • Cover the crock pot and allow the biscuits to cook for the remaining time.

Notes

For even cooking, dice the potatoes and onion uniformly. For a deeper flavor, consider sautéing the onions and celery before adding them to the crock pot.
