  • 2 lbs bone-in, skin-on chicken thighs
  • 1 tbsp olive oil for searing chicken
  • 1 tsp salt for seasoning
  • 1/2 tsp black pepper for seasoning
  • 1/2 tsp garlic powder for seasoning
  • 2 tbsp unsalted butter for sauce
  • 6 cloves garlic minced
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream for sauce
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp chopped fresh parsley for garnish

Preparation

  • Season the chicken thighs with salt, black pepper, and garlic powder. Set aside.

Cooking

  • In a large skillet, heat the olive oil over medium heat and add the seasoned chicken thighs, skin side down. Cook until the skin is crispy and golden, then flip and briefly brown the other side. Remove from the skillet.
  • In the same skillet, melt the unsalted butter, then add minced garlic and cook until fragrant but not browned.
  • Pour in chicken broth and scrape the bottom of the pan to deglaze. Allow to bubble.
  • Stir in heavy cream and bring to a gentle simmer, then add parmesan cheese and stir until melted.
  • Return chicken thighs to the skillet, spoon sauce over them, and simmer until cooked through and flavors meld.
  • Remove from heat, sprinkle with parsley, and serve warm.

Notes

Allow the dish to sit for a few minutes before serving to enhance flavors. Adjust garlic according to taste and use fresh herbs for garnish.
