Preparation

  • Season the cubed chicken with kosher salt, black pepper, and chili powder in a large mixing bowl.
  • Heat olive oil in a large skillet over medium heat and cook the seasoned chicken until golden brown and cooked through.
  • Remove cooked chicken and set aside. In the same skillet, sauté the quartered peaches and jalapeño chunks until they soften slightly.
  • In a separate bowl, mix peach preserves, one tablespoon of olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes until well combined.
  • Pour the sauce mixture over the sautéed peaches and jalapeños, letting it simmer briefly.
  • Return the cooked chicken to the skillet, mixing gently to coat in the peach sauce.
  • Thread the chicken and peach mixture onto the soaked wooden skewers.
  • Let the skewers rest for a few moments before serving.
