  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sour cream
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • to taste Salt & black pepper
  • ¼ cup fresh parsley, chopped For garnish

  • Heat the olive oil and butter in a skillet over medium heat.
  • Add the diced onion and cook until softened and translucent, about 3 to 5 minutes.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Season the chicken with paprika, Italian seasoning, salt, and black pepper.
  • Sear the chicken for about 5 minutes on each side until golden brown.
  • Pour in the chicken broth and heavy cream; stir until combined.
  • Reduce the heat and let it simmer; add sour cream and shredded cheese, stirring until smooth.
  • Return the chicken to the skillet, spoon sauce over it and cover to cook through.
  • Simmer until the chicken is fully cooked and flavors meld, garnish with parsley before serving.

Notes

Pairs well with a side salad or steamed vegetables. Leftovers reheat well and can be stored in the fridge for 3 to 4 days.
