  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sour cream
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • to taste Salt & black pepper
  • ¼ cup fresh parsley, chopped (for garnish)

Preparation

  • Begin by heating olive oil and butter in a large skillet over medium heat. Once melted, add the diced onion and sauté until it turns translucent.
  • Stir in the minced garlic and cook until fragrant, about one minute.
  • Add the chicken breasts to the skillet. Season with salt, black pepper, paprika, and Italian seasoning. Cook until golden brown on both sides.
  • Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits. Bring to a simmer, cooking the chicken through.
  • Lower the heat and add heavy cream and sour cream, stirring thoroughly to combine.
  • Mix in the shredded cheese until melted. Taste and adjust seasoning as needed.
  • Serve by placing a scoop of cooked rice on each plate, topped with the creamy chicken and sauce, garnished with chopped parsley.

Notes

This dish pairs well with a simple salad or steamed vegetables. Leftovers can be refrigerated and enjoyed the next day.
