  • cup sun-dried tomatoes (oil packed, drained and chopped)
  • ¼ cup grated Parmesan cheese
  • 1 cup chopped fresh spinach

Preparation

  • Start by placing the chicken breasts directly into your slow cooker. They should form a single layer, spaced out a bit so they cook evenly.
  • In a small bowl, combine the salt, Italian seasoning, paprika, and pepper. Sprinkle this mixture evenly over the chicken.
  • In a medium bowl, whisk together the heavy whipping cream, cornstarch, minced garlic, salt, and pepper until smooth.
  • Stir in the chopped sun-dried tomatoes and the grated Parmesan cheese into the cream mixture and pour it over the chicken in the slow cooker.

Cooking

  • Cover the slow cooker and set it to cook on low until the chicken reaches a safe cooking temperature.
  • If the sauce separates, give it a gentle stir to bring it back together.

Finishing Touches

  • After cooking, add in the chopped fresh spinach and stir well.
  • Taste and adjust any seasonings if needed before serving.

Notes

Serve this dish over rice or potatoes, and consider adjusting the amount of sun-dried tomatoes for a bolder flavor. Leftovers make great additions to salads or sandwiches.
