Ingredients
  

For the Tzatziki Sauce

  • 1 cup plain Greek yogurt Creamy base
  • 1/2 cup grated English cucumber Squeeze out excess moisture

For the Salad

  • 4 cups cooked chicken, chopped or shredded Protein
  • 1 cup diced cucumber Extra crunch

Preparation

  • In a mixing bowl, combine the plain Greek yogurt and grated English cucumber. Squeeze out any excess moisture from the cucumber.
  • Add the fresh lemon juice, grated garlic, chopped dill, and parsley to the yogurt mixture, mixing until well combined.
  • Season the tzatziki mixture with sea salt and black pepper, then set aside while preparing the chicken and vegetables.

Mixing the Salad

  • In a large bowl, place the cooked chicken, followed by the diced cucumber, diced celery, and diced red onion.
  • Pour the tzatziki dressing over the chicken and vegetable mixture, folding everything together gently.
  • Fold in the crumbled feta cheese carefully to avoid overmixing.
  • Taste the salad and adjust the seasoning if needed, then let it sit for a few minutes to allow the flavors to meld together.

Notes

Best enjoyed chilled or at room temperature. Pairs well with pita bread or on mixed greens.
