  • 2-3 tbsp grated Parmesan cheese adds salty, nutty flavor
  • 2 tbsp flat leaf parsley or fresh basil, chopped for freshness and color

Preparation

  • Season the chicken breasts with salt, pepper, and Italian seasoning. Rub the spices evenly over the chicken.
  • In a large mixing bowl, combine the white wine and water (or chicken broth). Stir in the sun-dried tomatoes, sweet paprika, garlic granules, and chicken bouillon (if using).
  • Heat the unsalted butter and olive oil (if using) in the Crock Pot on a low setting until melted and combined.

Cooking

  • Add the seasoned chicken breasts to the Crock Pot. Pour the wine and tomato mixture over the chicken.
  • Cover the Crock Pot and let the chicken cook on low for 4–6 hours or high for 2–3 hours.
  • Once the chicken is fully cooked, remove the breasts and set them aside. Stir in the sour cream or heavy cream into the remaining sauce.
  • If desired, thicken the sauce by mixing in the diluted cornstarch. Stir it into the sauce until well incorporated.
  • Return the chicken to the Crock Pot, tossing it gently in the creamy sauce. Add grated Parmesan cheese and chopped herbs.

Notes

Ensure even cooking by placing chicken breasts in a single layer in the Crock Pot. Monitor the flavors and taste the sauce before adding too much salt. Let the chicken rest a few minutes after cooking before slicing.
