  • 1 can great northern beans (15 oz, drained)
  • 2 tbsp cilantro (fresh, chopped)
  • 2 tbsp lime juice Freshly squeezed is best
  • 2 cups chicken broth
  • 1 cup onion (chopped)
  • 3 cloves garlic (minced)
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 8 oz cream cheese (softened) For a creamier texture

Preparation

  • Add all ingredients to the slow cooker except for the chicken. Mix well to combine, ensuring colors and aromas blend.
  • Nestle the chicken into the slow cooker, ensuring it is covered by the bean and sauce mixture.
  • Cover the slow cooker and set it to cook on low for 4 hours or on high for 2 hours.
  • Once cooking is complete, remove the chicken and shred it using two forks, then stir it back into the chili.

Notes

For added creaminess, serve with a dollop of sour cream, and consider using fresh lime juice right before serving for extra brightness.
