Ingredients
  

Chicken and Sauce

  • 4 boneless, skinless chicken thighs or breasts
  • 1/2 cup honey for sweetness
  • 1/4 cup soy sauce for umami flavor
  • 2 tbsp hoisin sauce for sweetness and savoriness
  • 4 cloves garlic, minced for aroma
  • 1 tsp fresh ginger, grated for spice and warmth
  • 1 tbsp rice vinegar for tanginess
  • 1/4 tsp chili flakes optional, for heat
  • 1 cup chicken broth for moisture
  • 1 tbsp cornstarch mixed with 2 tbsp water for thickening

Noodles and Garnish

  • 300 g egg noodles, spaghetti, or choice of noodles, cooked for texture

Instructions
 

Preparation

  • In a mixing bowl, whisk together honey, soy sauce, hoisin sauce, minced garlic, grated ginger, rice vinegar, and chili flakes until smooth.
  • Place chicken in the crockpot and pour sauce over it, ensuring the chicken is well coated, followed by adding the chicken broth.

Cooking

  • Cover the crockpot and cook on Low for 6-8 hours or on High for 3-4 hours until chicken is tender.
  • Remove the chicken, shred it with forks, and set aside.
  • To thicken the sauce, stir in the cornstarch slurry and cook on High until desired consistency.
  • Return shredded chicken to the crockpot, along with the cooked noodles, and mix until well combined.

Serving

  • Garnish with sliced green onions and sesame seeds if desired before serving.

Notes

Optional: Marinate chicken overnight for deeper flavor. Adjust chili flakes for desired heat level.
