  • 4 pieces chicken breast cutlets
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 large eggs beaten
  • 1/2 cup all-purpose flour
  • 1 cup sour cream
  • 1/2 cup chopped dill pickles
  • 2 tablespoons fresh dill
  • 1 tablespoon pickle juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Preheat your oven.
  • Lightly season the chicken cutlets with salt and pepper on both sides.
  • In a shallow dish, combine the panko breadcrumbs and grated parmesan cheese.
  • In a separate bowl, beat the eggs until frothy.
  • Spread flour out in another shallow dish. Dredge each chicken cutlet in flour, then dip into the egg mixture, and finally coat with the breadcrumb and parmesan mixture.
  • Heat olive oil in a large skillet over medium heat.

Cooking

  • Carefully place the breaded chicken cutlets in the skillet and cook until golden brown on both sides.
  • Transfer the chicken to a baking sheet and finish cooking in the oven until fully cooked through.
  • In a mixing bowl, combine sour cream, chopped dill pickles, fresh dill, and pickle juice to prepare the sauce.
  • Let the chicken rest for a few minutes before serving.
  • Serve the cutlets topped with the dill pickle sauce.

Notes

Serve with roasted vegetables, creamy mashed potatoes, or over rice. Ensure chicken is evenly coated and do not overcrowd the skillet. Adjust seasoning to taste. Store leftovers in an airtight container.
