  • 2 lbs Chicken, shredded Tender and juicy.
  • 0.25 cups Taco seasoning For flavor.
  • 0.5 cups Yellow onion, diced Adds sweetness and texture.
  • 12 ounces Cheddar cheese, shredded For creaminess.

Preparation

  • Preheat your oven to the recommended temperature.
  • In a large mixing bowl, combine the shredded chicken with taco seasoning, ensuring the chicken is well-coated.
  • Add diced yellow onion to the seasoned chicken mixture and stir until evenly distributed.

Assembly

  • Pour a layer of enchilada sauce in the bottom of a casserole dish.
  • Lay one tortilla in the dish, then spread a portion of the chicken mixture over the tortilla, followed by shredded cheddar cheese.
  • Continue layering tortillas, chicken mixture, enchilada sauce, and cheese until all ingredients are used, aiming for at least three layers.
  • Ensure the top layer has a generous amount of enchilada sauce and cheese.

Baking

  • Place the assembled casserole in the preheated oven and bake until the cheese is bubbly and starting to brown.
  • Allow the casserole to rest for a few minutes after baking before serving.

Notes

Serve with a fresh green salad or tortilla chips. A dollop of sour cream or cilantro enhances flavor.
