Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • In a 9×13 inch baking dish, combine the diced onion, red bell pepper, uncooked brown rice, fajita seasoning, and cayenne pepper (if you're using it). Stir everything together gently.
  • In a separate bowl or measuring cup, whisk together the chicken broth, green chiles, tomato paste, and olive oil until fully combined.
  • Pour the broth mixture over the rice and vegetable blend in the baking dish. Stir everything together thoroughly.
  • Add the shredded chicken, black beans, and frozen corn to the baking dish. Mix until well combined.

Cooking

  • Cover the baking dish tightly with aluminum foil and transfer to the preheated oven to bake.
  • Bake for 65-70 minutes, or until all the liquid has been absorbed.
  • After baking, carefully remove the aluminum foil and sprinkle the grated Monterey Jack cheese evenly over the top.
  • Return the casserole to the oven for another 5-10 minutes, until the cheese has melted and is bubbly.
  • Allow the dish to cool for 5-10 minutes before serving.

Notes

Consider garnishing with fresh cilantro, green onion, salsa, or avocado for added freshness and flavor.
