Instructions
 

Preparation

  • Heat 2 tablespoons of vegetable oil in a non-stick pan over medium heat until shimmering.
  • Add the minced garlic and grated ginger to the pan, sautéing for about 1 minute until fragrant and golden.
  • Add the diced chicken breasts to the pan. Cook for 5-7 minutes, stirring occasionally until the chicken is no longer pink and lightly browned.
  • Pour in the coconut milk and soy sauce, stirring to combine. Bring the mixture to a gentle simmer.
  • Allow the dish to cook for an additional 2-3 minutes, stirring occasionally, until the mixture thickens slightly.
  • Season with salt and pepper to taste and stir in the fresh lime juice.
  • Serve the cooked chicken over a bed of rice and garnish with chopped cilantro or green onions.
