  • 1 pound boneless, skinless chicken breasts (cubed)
  • ¾ teaspoon garlic salt
  • ¼ teaspoon ground black pepper
  • 4 cloves garlic (minced)
  • 1 cup dry white rice
  • 3 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ¼ cup freshly grated Parmesan cheese

Preparation

  • Season the cubed chicken breasts with garlic salt and black pepper.
  • Heat oil in your skillet or saucepan over medium heat, then add the seasoned chicken.
  • Cook the chicken until golden brown and no longer pink in the center, then set aside.

Cooking

  • Add minced garlic to the skillet and sauté until fragrant, avoiding browning.
  • Stir in the dry rice and toast slightly for a minute or two.
  • Pour in the chicken broth, scrape browned bits from the bottom, bring to a simmer, cover, and cook until rice absorbs most of the broth.
  • Stir in heavy cream and fresh spinach, mixing until the spinach is fully incorporated.
  • Add the cooked chicken back into the skillet and sprinkle grated Parmesan cheese, stirring to combine over low heat.

Notes

Serve with a side salad or crusty bread. Leftovers taste great the next day.
