Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 packet dry ranch dressing
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 10 oz can Rotel diced tomatoes and green chilies (do not drain)
  • 1 15 oz can whole kernel corn (drained)
  • 1 15 oz can black beans (drained and rinsed)
  • 1 8 oz block plain cream cheese Cut into cubes
  • 2 pieces fresh squeezed limes Juice needed
  • ½ cup chicken broth

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts in the bottom of your crock pot.
  • Sprinkle the dry ranch dressing packet evenly over the chicken.
  • Add onion powder and ground black pepper to the chicken.
  • Pour the undrained can of Rotel diced tomatoes and green chilies over the chicken.
  • Add drained whole kernel corn and rinsed black beans to the mix.
  • Distribute the cubed cream cheese on top of the ingredients.
  • Squeeze the juice from the fresh limes over the whole mixture.
  • Pour chicken broth evenly around the ingredients in the crock pot.

Cooking

  • Cover the crock pot with the lid and allow everything to cook until the chicken is tender and fully cooked.

Notes

This dish pairs well with rice or tortilla chips. Store leftovers in the fridge for great lunches.
