Preparation

  • Start by cutting the chicken breasts into bite-sized pieces, approximately 5cm (2in) in size for even cooking.
  • In a mixing bowl, combine olive oil, lemon juice, garlic, sweet paprika, dried oregano, rosemary, pepper, and salt to create a marinade.
  • Pour the marinade over the chicken chunks and toss gently to coat well.
  • Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes or up to 24 hours.
  • Soak bamboo skewers in hot water for 30 minutes to prevent burning; metal skewers do not need soaking.
  • Thread chicken and red onion chunks onto skewers, alternating pieces for variety.
  • Brush the skewers with any remaining marinade before cooking.

Cooking

  • Place skewers on a hot grill or griddle pan and cook for 2-3 minutes on each side until golden brown.
  • Check that the chicken is cooked through after approximately 10 minutes total cooking time.
  • Remove skewers from the grill and let rest for 5 minutes before serving.
