Ingredients
  

For the brine

  • 4 cups warm water Helps dissolve salt and sugar
  • ¼ cup kosher salt Enhances flavor and moisture
  • 2 tablespoons brown sugar Adds sweetness and balance

For the chicken

  • 4 pieces boneless chicken breasts or thighs Tender and juicy

For the spice mixture

Instructions
 

Preparation

  • In a large bowl, combine the warm water, kosher salt, brown sugar, and smashed garlic. Stir gently until the salt and sugar have completely dissolved.
  • Once the brine is prepared, add the boneless chicken breasts or thighs to the bowl. Ensure the chicken is fully submerged in the brine for about 30 minutes.
  • After the chicken has brined, remove it from the water and rinse gently under cold water to wash off excess salt. Pat the chicken dry with paper towels.
  • In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, paprika, oregano, and cayenne pepper.
  • Brush the spice mixture over the chicken generously.

Grilling

  • Preheat your grill to medium-high heat.
  • Place the chicken on the grill grates. Grill for about 6-7 minutes on one side without moving it.
  • Flip the chicken and continue grilling for another 6-7 minutes, or until the internal temperature reaches 165°F.
  • Once done, transfer the grilled chicken to a plate and let it rest for a few minutes before slicing.
  • Serve the grilled chicken warm and enjoy.

Notes

For best results, always brine your chicken for at least 30 minutes, pat it dry before seasoning, preheat the grill, and let the chicken rest after grilling.
