Preparation

  • Gather all the ingredients. In a mixing bowl, combine the red wine vinegar, reduced-sodium soy sauce, and olive oil. Whisk until well blended.
  • Add the dried parsley, basil, oregano, garlic powder, and ground black pepper to the bowl. Stir thoroughly until fully incorporated.
  • Place the thinly sliced chicken breasts in a sealed container or a large zip-top bag. Pour the marinade over the chicken, ensuring all pieces are coated.
  • Seal the container or bag tightly and gently massage the marinade into the chicken. Let it sit for at least 30 minutes.

Cooking

  • Preheat the grill.
  • Remove the chicken from the marinade, allowing any excess to drip off, and discard the remaining marinade.
  • Grill the chicken on medium heat until fully cooked, ensuring a nice char on the outside.

Notes

Ensure the chicken is thinly sliced for quick marinating and even cooking. Avoid using too much marinade; just enough to coat the chicken will suffice. Letting the chicken marinate longer enhances the flavor, but don’t exceed a few hours to prevent mushy texture.
