Ingredients
  

Grilled Shrimp

  • 1 lb. large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Corn Salsa

  • 1 cup frozen corn, thawed
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime juiced
  • Salt to taste

Creamy Garlic Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Toppings

  • 1 avocado sliced or mashed
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish

Instructions
 

Preparation

  • Start by preparing the shrimp. In a bowl, combine the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if you like a little heat. Toss everything together so the shrimp are well coated in the seasoning mix.
  • In another bowl, combine the thawed corn, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and a bit of salt. Mix gently to combine.

Grilling

  • Place the seasoned shrimp on the grill and cook them for a couple of minutes on each side until they are opaque and firm to the touch.

Sauce Preparation

  • In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lime juice, minced garlic, salt, and pepper.

Assembly

  • Divide the corn salsa between serving bowls, top with grilled shrimp, followed by the sliced or mashed avocado, and drizzle the creamy garlic sauce.
  • Garnish with sesame seeds and chopped green onions.

Notes

For best quality, enjoy the shrimp and salsa right after preparation. If you have leftovers, store them in an airtight container for up to two days in the fridge. Reheat shrimp gently to avoid overcooking.
