Main Ingredients

  • 1.5 lbs Chicken Thighs (or breasts)
  • 2 tbsp Olive Oil
  • 1.5 cups Long-Grain White Rice
  • 3 cups Chicken Broth or Water
  • 1 cup Barbecue Sauce Choose quality barbecue sauce for best flavor.
  • 0.5 cup Honey

Aromatics

  • 1 medium Onion For flavor enhancement
  • 3 cloves Garlic For aromatic depth

Preparation

  • In a small bowl, combine the barbecue sauce with honey, stirring gently to mix them together.
  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken thighs with salt and pepper and add them to the skillet. Sear for 3-4 minutes on each side.
  • Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes.
  • Add uncooked long-grain white rice to the skillet, stirring to coat. Toast for about 1 minute.
  • Pour in the chicken broth (or water) and nestle the seared chicken back into the skillet.
  • Drizzle the honey BBQ sauce mixture over the top.
  • Bring to a gentle boil, cover, and reduce the heat to low. Let it simmer for 18-20 minutes.
  • Remove from heat and let it rest for 5 minutes.
  • Garnish with freshly chopped parsley before serving.

Notes

Store leftovers in the fridge for up to three days or freeze for up to three months. Reheat on the stovetop with added moisture to maintain texture.
