Ingredients
  

For the Chicken

  • 4 pieces boneless chicken breasts
  • 1/4 cup honey Adjust sweetness as desired
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder For heat; adjust to preference
  • Salt and pepper to taste Important for flavor

For the Mango Salsa

  • 1 piece ripe mango, diced Fresh for best flavor
  • 1/2 piece red bell pepper, diced
  • 1/4 piece red onion, finely chopped
  • 1 piece jalapeño, seeded and minced (optional) For added heat
  • 2 tablespoons cilantro, chopped
  • 1 piece lime, juiced Fresh juice recommended

Instructions
 

Preparation

  • Pat chicken breasts dry with a paper towel, then season both sides with salt and pepper.
  • In a small bowl, mix honey, lime juice, and chili powder until well combined.

Cooking

  • Heat a large skillet over medium heat, add a drizzle of oil, and place chicken breasts in the skillet.
  • Cook chicken for a few minutes until golden brown, then pour the honey mixture over the chicken.
  • Cook in the glaze, turning occasionally, until the chicken is evenly coated and the glaze thickens.

Salsa Preparation

  • In a mixing bowl, combine diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, and lime juice.
  • Toss everything together until well mixed.

Finishing Up

  • Check the internal temperature of the chicken to ensure it is cooked through, then let it rest before slicing.

Notes

Serve with rice or a green salad. Leftovers can be used in wraps or added to grilled fish. Adjust honey in the glaze to preferred sweetness.
