  • 3 pounds boneless skinless chicken thighs
  • 2 teaspoons paprika
  • 1.5 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon crushed red pepper flakes adjust for spice level
  • 1 medium lemon, zested and juiced
  • 1 tablespoon minced garlic
  • 6 tablespoons salted butter, cut into slices
  • 1 medium lemon, sliced (optional)
  • 1 tablespoon chopped fresh parsley (optional) for garnish

Instructions
 

Preparation

  • In a large mixing bowl, combine the paprika, salt, garlic powder, onion powder, black pepper, and crushed red pepper flakes.
  • Add the chicken thighs to the bowl with the seasoning mixture and toss until well coated.
  • Zest and juice the lemon, adding these to the seasoned chicken, and mix well.
  • Add the minced garlic to the chicken and stir until evenly distributed.

Cooking

  • Transfer the chicken mixture to the crockpot and layer the sliced butter on top.
  • Optionally, lay the lemon slices over the chicken.
  • Cover the crockpot and set it to cook.
  • Once cooking is finished, the chicken should be tender and easily pull apart with a fork.
  • Gently scoop the chicken onto a serving platter and drizzle any buttery sauce over the top.

Notes

Don't rush the cooking process; slow cooking enhances flavors. For thicker sauce, remove the lid during the last hour. Garnish with fresh parsley for added brightness.
