Instructions
 

Preparation

  • Butterfly the chicken breasts by slicing them in half lengthwise to create thinner pieces.
  • Place each piece between two sheets of plastic wrap and pound them to about ¼-inch thickness using a meat mallet.

Cooking the Chicken

  • In a large sauté pan, heat 1 tablespoon of olive oil over medium-high heat.
  • Season the chicken with salt and black pepper on both sides, then add to the hot oil.
  • Cook for approximately 5 minutes on each side until cooked through and golden.

Cooking the Orzo

  • Bring a pot of water to a boil and cook the orzo according to package instructions until al dente.
  • Drain and set aside.

Combining Ingredients

  • Remove cooked chicken and let it rest; cover loosely with foil.
  • In the same sauté pan, heat the remaining olive oil and add minced garlic; sauté for about one minute.
  • Add cherry tomatoes and white wine, cooking for about 5 minutes until softened.
  • Stir in the orzo, kalamata olives, spinach, pine nuts, basil, parsley, oregano, black pepper, and red pepper flakes; mix gently.

Finishing the Dish

  • Crumble feta cheese over the orzo mixture and stir briefly to combine.
  • Slice the chicken and serve on top of the orzo mixture.

Notes

Ensure the chicken is pounded evenly for consistent cooking. Use fresh herbs for enhanced flavor. Avoid burning the garlic during cooking. Consider toasting pine nuts for a deeper flavor.
