Easy Sesame Ground Chicken

Ingredients
  

For the Chicken Dish

  • 1 tablespoon neutral oil (canola, avocado, or sunflower)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium red bell pepper, thinly sliced into strips
  • 6 oz shiitake mushrooms, stems removed, caps thinly sliced (approximately 170 g)
  • 1 pound ground chicken (approximately 450 g)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 small lime, zest and juice
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon chili garlic sauce (sambal oelek)
  • 1-2 tablespoons toasted sesame seeds (for garnishing)
  • 2 green onions thinly sliced (for garnishing)
  • Salt and ground black pepper to taste

Instructions
 

Preparation

  • Heat the neutral oil in a large skillet over medium heat.
  • Add the minced garlic and grated ginger, stirring together until fragrant (about 1 minute).

Cooking

  • Toss in the thinly sliced red bell pepper and shiitake mushrooms. Stir and cook for 2-3 minutes until slightly softened.
  • Add the ground chicken, breaking it apart with a spatula. Cook until it turns from pink to white and starts to brown.
  • Once the chicken is cooked, add soy sauce, rice vinegar, lime zest and juice, toasted sesame oil, maple syrup, and chili garlic sauce. Mix thoroughly.
  • Simmer gently for 1-2 minutes until everything is well coated and the sauce melds.
  • Taste and adjust seasoning with salt and ground black pepper as needed.

Serving

  • Serve hot, garnished with toasted sesame seeds and sliced green onions.

Notes

For serving ideas, consider serving over rice or tossed with noodles. Leftovers taste even better and can be stored in the fridge for up to three days.
