  • 2 cups cooked chicken breast, shredded or chopped adds protein and texture

  • 1/4 cup sour cream or Greek yogurt for the dressing, gives creaminess

Instructions
 

Preparation

  • In a small bowl, combine the sour cream (or Greek yogurt), lime juice, olive oil, ground cumin, chili powder, salt, and pepper. Whisk until smooth.
  • In a large mixing bowl, add the cooked chicken, black beans, corn, diced red bell pepper, red onion, cherry tomatoes, avocado, and fresh cilantro. Mix well.
  • Pour the prepared dressing over the salad mixture and gently toss until all ingredients are evenly coated.
  • Sprinkle the shredded cheese on top. If using, add tortilla strips or crushed tortilla chips.
  • Serve immediately or chill before serving. If chilling, cover with plastic wrap or a lid.

Notes

Use freshly cooked chicken for the best flavor. Add avocado right before serving to prevent browning. Adjust seasoning to taste, especially salt and pepper. For extra zing, increase lime juice. Greek yogurt can replace sour cream for a creamier dressing.
