For the Avocado Salsa

Preparation

  • In a small bowl, whisk together the chicken rub ingredients: lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and pepper. Coat the chicken breasts evenly with the rub and let sit at room temperature for about 30 minutes.

Cooking

  • For stovetop cooking, heat a grill pan over medium-high heat. Add the chicken and do not move it for 3-5 minutes to develop a nice sear.
  • Flip the chicken carefully, cover with a lid, and lower the heat. Cook for an additional 5-7 minutes until the internal temperature reaches 160°F.
  • For outdoor grilling, preheat the grill to medium heat and grill the chicken for 5-7 minutes per side until cooked through.

Making the Salsa

  • In a mixing bowl, combine cherry tomatoes (or Roma tomatoes), corn, red onion, red bell pepper, jalapeno, cilantro, garlic, lime juice, cumin, and pepper. Toss gently to combine.
  • Chill the salsa in the refrigerator for at least 30 minutes before serving. Fold in chopped avocados just before serving.

Ensure even thickness when pounding the chicken for uniform cooking. Marinate the chicken for at least 30 minutes for enhanced flavor. Use fresh ingredients for the salsa for the best flavor.
